Vegan Pumpkin Smoothie
This vegan smoothie is creamy, nourishing, grounding and packed with protein and cozy warming spices! It makes an energizing breakfast or snack and will easily become a fall favorite.
Vegan Pumpkin Smoothie
Ingredients
- 1/2 cup unsweetened plant based milk (almond, coconut, oat, etc.)
- ½ cup plain or vanilla yogurt
- 1/2 cup pumpkin puree
- 1 frozen pealed banana (peal before freezing!)
- 2 dates (pitted and soaked in warm-hot water for two minutes)
- 1 tablespoon almond butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- pinch each of nutmeg & ginger & smallest pinch of allspice
- Optional – 1 tbsp chia seeds, 1 tbsp hemp seeds, scoop of plant-based vanilla protein powder
- Top with pecan pieces, cacao nibs or granola (or all 3!)
Instructions
- Add all ingredients to a blender and blend until smooth!
